Happy Valentine's Day, loves
A quick Valentine’s Day wish to my friends and clients who allow me to do what I LOVE every day!
Lolo and I just returned from a magical Rivera Maya moment staying — three nights at the newly renovated Belmond Maroma and a Mexico staple, Rosewood Mayakoba. Both properties are stunning and perfect in their own way. More detailed notes to come!
Today’s plan is to start our DNI (date night in) this afternoon with Palm Heights in mind — one of our favorite beach properties where the food and beverage truly shines! We visited in November of 2024 and are still dreaming of our last meal!
Tillie's is their all-day restaurant, and you could eat two meals a day there and never tire of it. Our flight home was late in the afternoon, so a late lunch was in order! I had the Coal Rotisserie Chicken with aji verde and local greens—perhaps the most perfect dish—alongside a limey jicama salad, toasty pita, and salty butter.
Tonight we're recreating our delicious dinner with Peruvian Roasted Chicken with Spicy Cilantro Sauce, Toasted Coconut Rice and a green salad with Jicama and a lime vinegarette — pairing our feast with an epic love story: Out of Africa.
