If you know Flower Child, you know the Glow Bowl. I’m obsessed, so I made it at home.
Serves 2 | 25 minutes
For the bowl
1 sweet potatoes, spiralized (or roasted chunks!)
1 zucchini, spiralized
1 sweet onion, sliced
1 cup bok choy + 1 cup snap peas
2 tbsp avocado oil
1 lb protein of choice: steak, shrimp, chicken, or tofu
The Glow Sauce
½ cup tahini
2 tbsp coconut aminos
1 tbsp honey
Juice of 1 lime
1 tbsp chili crisp
Splash of almond milk or warm water to thin
To finish: cilantro, mint, cashews, lime wedges
How to make it
Whisk the sauce ingredients, adding a splash of liquid until it’s drizzly.
Sear your protein and set aside.
Sauté the onion, bok choy, and snap peas in sesame oil until bright and just tender.
Toss in the noodles for a few minutes. Salt well.
Pour in some sauce and toss over low heat for 30 seconds.
Pile into bowls, top with protein, more sauce, herbs, and cashews. Squeeze of lime. Glow. 🍋
Libby’s tip: No spiralizer? Roast your sweet potatoes, then air fry at 400°F for 10 minutes to crisp them. A happy accident I’ll never go back from.
